The Irish Dance Experience
** if your preferred date isn't listed just get in touch!** You will experience and try out a few different styles of Irish dance... You will hear and dance to traditional Irish music to give you a taste of some of the time signatures and traditional tunes we dance to in Ireland. You will also learn a little bit about the history of our traditional dance and it's evolution over the years. Most importantly we will have a bit of craic! I love being able to share my passion for our traditional dance in my home town and am proud to offer this experience. Seaweed & Abalone Farm Tasting Tour
You'll discover the future of food at our coastal landbased aquaculture farm tucked away amongst the maze of old stone walls in Rossaveel. Guided by Sinead and Cindy, you'll experience the joys of identifying and foraging seaweed along the rugged coastline and enjoy a tour of this modern aquaculture system. We'll provide you with a delicious tasting of fresh seafood dishes that makes use of the seafood grown on the farm as well as fresh wild ingredients foraged from the nearby sea. Traditional Irish Stew & Brown Bread Baking with lunch
Traditional Irish stew Irish stew is renowned throughout the world and was recently listed by The Lonely Planet in their Top 50 food experiences. I give guests hands on experience of preparing and cooking this healthy and nutritious dish using my own traditional recipe handed down to me from my grandmother. Guests will learn which vegetables to use and what cut of lamb gives best results. And they get to sample the finished product of this delicious dish. Ingredients are: lamb, onion, carrot, celery, bay leaf, thyme, potato, turnip and leek. Vegetable stock. Vegetarian versions are available. Please do let me know if you have any dietary/ allergy or food concerns. Traditional Irish Brown Bread Whilst the stew is cooking I will teach you how to bake our traditional Irish brown bread. After cooking we will sit down and have lunch which is included in the price.
Irish Homemade Baking Scones and Bread
We will bake fruit, lavender and berry scones, and spelt or brown bread. I believe in a hands on approach for my guests - from handling ingredients to kneading dough. It isn't all about the cooking, I share lots of tips from my experience over the years. I love to see my customer's faces full of excitement and joy at the sight of the end product - freshly baked scones and bread. And best of all we have lots of fun. If any of the dates on my calendar do not suit you, please contact me and I’ll do my best to accommodate you. We can also make gluten or wheat free goods, vegan goods and can accommodate to any dietary requirements you might have.
Apothecary Folklore & Tasting
We'll explain what we do and how we do it. You'll learn the difference between Tinctures; Bitters and Syrups and will be offered examples, smells and tastes of each. We'll then tell you how you can use these practically for Cocktail, Drink & Culinary purposes. You will learn about America Village and the mythology and folklore of our main base and why it is named 'America Village'. We will tell you a little about the landscape, You will then learn about some of the plants that grow there and be given the opportunity to immerse your senses in some of the scents and flavours of America Village and Connemara.. You will end the tour with one of our Signature serves, either alcohol based or not depending on your preference.

Galway's legendary walking tour !
The legendary tour centers around the tale of the Lynch family. Its a fascinating tale of how Walter Lynch is accused and tried for the murder of a visiting Spaniard who was a little too interested in his beautiful wife to be...or was he ? The story ends in a dramatic climax...but you will have to take the tour for that finale ! We also look at the legend of the Claddagh ring with a tale connected to Caribbean pirates, North African slave owners and a gold ring that speaks of eternal love. Christopher Columbus makes his appearance too, looking for a new way to China, but worrying that Atlantis might stand in his way. These and other tales are woven together in a 80-90 minute walk through the city. Its taken at a gentle pace to bring in all the major places of interest and embed them into the story of our city. Other things to note Dont worry about it raining - we have plenty of places to hide out of the rain !

West Coast Surfing near cliffs of Moher Experience
Learn to surf on Irelands top surf beach near the cliffs of moher in County Clare! ***Location is set as Galway bus station for guests travelling via 350 bus from Galway city. Surf lesson is in Lahinch! Option 1. €60 If you have your own transport, simply contact me and I will let you know the best time to surf, on the date you want to come and I will meet you here, at the surf school in lahinch. We provide 5mm Warm wetsuits boots hoods and beginner boards I do 1.30 hour lesson with you in the water. Option 2. €75 If your in the local area or visiting the cliffs without transportation , I can arrange to pick you up locally (eg.doolin or at the cliffs visitor centre) and show you some of my favourite and lesser visited viewing points at the cliffs. each experience can be customised to suit you! Other things to note Surfing is FULLY dependent on ocean conditions which change Daily, times and dates are suggested for purposes of listing the experience you MUST contact me before booking please!
Fat Bike Galway - Taste of Connemara Tour
Ride an Electric Fat Tyre Bike to escape the hustle and bustle of city life and traffic, during this HALF DAY adventure which will give you a real taste of the magical landscape of Connemara. Your RadRhino pedal-assist eBike makes for easy work throughout this tour, which means it’s suitable for everybody over 14 years. The fat wheels provide excellent rider comfort and afford us the time to fit lots in to this fabulous cycle which takes in lakes, rivers and the ocean at the picturesque fishing village of Spiddal. Our tour starts along quiet country lanes which soon provides us with fabulous views over Galway Bay. We’ll pass by several bog lands where we can see the turf at its various stages being prepared for winter fuel. The hills and mountains before us, water all around, the boggy, rugged landscape, this is Connemara. Our arrival into Spiddal places us in ‘The Gaeltacht”, an area where the Irish language is spoken widely. Here, we can enjoy some leisure time in this lovely seaside village, perhaps a swim in the ocean, a coastal stroll or visit the Irish Craft Village and Café. Our return journey takes us back via the country lanes, before we detour to cycle an old quaint bog road that takes us back to the old days. This will be a truly memorable trip, one to cherish. Fat Bike Galway - Galway Tour
Ride an Electric Fat Tyre Bike to experience the beautiful Galway city and its stunning hinterland, during this HALF DAY adventure. Your RadRhino pedal-assist eBike makes for easy work throughout this tour, which means it’s suitable for everybody over 14 years. The fat wheels provide excellent rider comfort and afford us the time to fit lots in to this breathtaking cycle, which takes in the ocean, Salthill’s promenade, Galway city and its waterways, River Corrib and countryside. Our tour starts from Cappagh Park, through Barna Woods before arriving at our fabulous local beach Silverstand, which overlooks the world renowned Galway Bay. A short ride along the Wild Atlantic Way brings us to Salthill’s iconic Blackrock. Here, we can choose to swim, dare jump off the diving board or simply relax, grab a coffee and watch the fun. Then we’ll ride beside the ocean to the city, along Nimmo’s Pier, taking in the sights around famous Spanish Arch. From here, we’ll explore the many waterways that surround Galway Cathedral and Nuns’ Island, before cycling along the River Corrib as far as the beautiful old ruin at Menlo Castle. Our return trip takes in the countryside and provides us with majestic views of Galway Bay. And never mind the weather ! You’ll be sure to have a day to remember regardless. Galway's Christmas walk !
We start at the Meyrick hotel, who always put on a great display as we near Christmas. We then wander through the Christmas market on Eyre square (OK,OK, you will just have to imagine it this year!) before taking in the inspiration for a very famous Christmas story by a literary great. We then head through the main shopping area of the city, taking a moment to admire some of the medieval remains and the odd festive busker or two Many of them know me well from conducting various tours over the years. We then head into the Church of St Nicolas of Myra (better known as Santa Claus) to explore its hidden treasures. Finally we end up in one of my favouite cafes for coffee (or tea) and a seasonal treat. (included). Mince pies all round ! Afternoon food tour in Galway
Take a walk through the historical medieval city of Galway, also known as "The City of The Tribes" with a local guide, using food and drink as a way of explaining the history and culture of this bustling and thriving University city. We visit 4 different venues that are favourite's of ours and we have food and drink in each venue. The tour lasts 3 hours.
Morning walking tour through Galway
This walking tour will bring you through the medieval streets of Galway and I will show you the important sites that has made Galway the city that it is today. Find out why Galway is called the City of the Tribes. Discover the people who had influence on the history of the city like the Lynch's, de Burgo`s and others like Richard Martin. Find out the city's connection to the beheading of the King of England Hear the story of the Claddagh Ring. The tour starts in Eyre Square, giving you a historic overview of various periods of Galway's past. We then make our way down through the city stopping at Lynch's Castle, the Hanging Window, and St. Nicholas Collegiate Church. We then visit the Spanish Arch. As we progress through the city I use my local knowledge to show you the places where locals love to eat and drink. We finish the tour by visiting a beautiful area that generally is not visited on other walking tours. The walking tour takes 90mins - 2 hours approx.

The Claddagh ring experience
The Claddagh ring experience takes in some of the main sights of Galway weaving them into the story and legends of the ring. After passing through the stunning Latin quarter and Spanish arch areas of Galway we see some of the works of Richard Joyce, the hero of the Claddagh ring legend and maker (probably) of the first Claddagh ring sold commercially. After few tales of the folklore of the Claddagh we head up into the village itself. In Katie's cottage, a re-built Claddagh cottage we can enjoy a coffee or tea and a cake (included) in authentic surroundings. Galway City is a compact city well suited to this leisurely stroll through a medieval, picturesque masterpiece. Other things to note The walking is very gentle, although the walk up to Katies cottage takes approx 10 mins. Those with reduced mobility may wish to book a taxi to return to town
Ancient folk methods, laughter & nature in The Burren
Together, dear friends, we'll learn about ancient folk-healing methods while immersing ourselves in nature in well-hidden sacred sites around the Burren. Our tours are small and intimate and together we can laugh, dance, sing and shake out a little (if you feel like it) and connect with nature in the outdoors. Get in touch with your own natural propensity to heal through conscious awareness. I've just relaunched the second edition of my book 'Nourishment - Stories from the Burren' first published in 2019 with the support of Creative Ireland and UNESCO Burren Geopark. Writing this has put me in a position to share authenticated information about the archaeology, geology of the area as well as ancient healing traditions handed down by medieval monks and local families. All experiences will be held in Burren UNESCO Geopark.
Visit an Oyster Farm with the Owner
In this experience, you will visit an oyster farm—one of the oldest in the country—and see how oysters have been grown for centuries in the crystal cold waters here. Oysters have been farmed in Ballinakill Bay, Connemara since 1893. Originally, the oysters were brought by horse and cart in barrels to Clifden, then they traveled by rail to Dublin for shipment on the mail boat to England. Today, oysters from Ballinakill Bay are served in local hotels and restaurants as well as being exported worldwide. Food can stimulate all our senses—taste, smell, vision, and feel. Your visit to the DK Connemara Oyster Farm truly does reach all those senses. Smell the fresh, wild Atlantic air. See the farm crew working hard in the water to grow the most perfectly formed oysters. Shuck your own oyster and take a guess at its weight, again learning more about the work put in to create flawless oysters. From "Seed to Plate" is the name of our Tour so of course, you'll finish with a taste of a beautiful fresh oyster. Other things to note We are a working farm and part of our tour is conducted outside, so please wear suitable clothes and footwear. If its raining heavily we can also deliver the tour indoors in our grading shed.
Traditional Irish Coffee and Apple Pie
My home kitchen is the start of this Irish dessert experience. We gather around the work space to start the prepping and making of the traditional apple pie and homemade traditional custard. While the pie is baking, we start our adventurous and delicate journey in the subtle art of making the traditional Irish custard! We then learn the basics of our tasty alcohol free traditional Irish coffee. There is a balancing act between the ingredients to keep the beautiful end result. So we hope to build a little confidence before you go home to try it with alcohol if you so wish. This is an experience for all ages, with the warm apple pie in your stomach and a soothing warm drink! The complete non- alcohol Irish coffees can be enjoyed by all, but of course for children of all ages we provide Irish milk hot chocolate, cocoa or tea! With the burning turf fire, and the delightful traditional Irish music for our background, you may even leave dancing a jig or a reel! Other things to note Everything is provided for this experience, and I look forward to giving you a true Irish welcome. Due to Covid-19 restrictions all the experiences are held at my cafe in Oranmore, or online on Zoom.
