Learn the dying art of making pasta entirely by hand and enjoy a truly unique experience in a relaxed, homely atmosphere, where you'll learn all there is to know about pasta and will create some of the most unusual and beautiful pasta shapes, traditional in Italy but virtually unknown in the UK.
Each month there is a new pasta to learn, new flours and flavours to explore.

A brief introduction to the history of pasta and why there are 2 ways of making pasta (egg and egg-free)
Learn to mix different gluten-free flours (according to the pasta of the month) and other ingredients, the best ways of kneading, and all the secrets to obtaining a perfect gluten-free dough
Cooking demonstration of the sauce that will be served with the pasta
Handle, pull, and fold the delicate gluten-free dough to obtain the pasta shape of the month (no machine used)
The best cooking technique for the perfect pasta al dente
Enjoy the delicious fruits of your labour together with the other guests, Italian style.
All equipment (minus an apron) and ingredients provided

Ciao! I'm Silvana and I'm a 4th generation artisan pasta maker and a keen cook from Naples. My passion is to teach the dying art of making pasta entirely by hand, saving rare pasta shapes from disappearing and helping pasta lovers to recreate the authentic Italian experience, teaching techniques passed down to me by my family.
My grandma has taught me everything I know, started training me when I was a teeny weeny 5-year-old. She's been my only teacher for 17 years, allowing me to earn first hands experience in her small pasta factory. In July 2017 I featured on BBC2's "Inside the Factory" as a pasta expert.

Very nice experience! We were a family of 6, enjoying cooking together for the first time. Silvana was very knowledgeable, professional and nice. She tought us not only how to cook the pasta but some history about the pasta production in her beloved Naples city in Italy. I loved the fact that we were active all the time during this class. We cooked our own pasta following her instructions. She is a good teacher and has patience with those who have less cooking skills. At the end, we ate our pasta and it tasted delicious. We were proud of ourselves. Thank you Silvana for a great experience!

Silvana is an expert. She is so kind, knowledgeable, and welcoming. I really feel I could make pasta at home or even teach someone else after just one class! I learned so much and feel like a new pasta cooking journey has just begun. :)

Silvana has been very kind and knowledgeable. Not only she shared her wisdom, answered all the questions I had, but was also a great listener. The class was well structured - we had an introduction to the subject and the explanation of the know-how for the gluten-free replacements, followed by the hands-on time during which I made the pasta myself. In the spare time ( - the boiling time) we have gone through the tips for day-to-day pasta shopping, what made the experience even more complete and unique. I fully recommend it to anyone. Thank you Silvana once more and all the best in the future!

Had an absolutely fantastic gluten free pasta workshop with Silvana, she is so passionate about pasta and I learnt so much in just a short space of time. Pasta was amazing and tasted like gluten pasta! Really good experience for coeliacs, food was super tasty

Learning the dying art of home made pasta with Silvana was an experience my husband and I will never forget. We love Italy and Italian cuisine, so our friends chose this for us as a wedding gift, and it was the best gift EVER. Silvana is so passionate and knowledgeable about her craft and she makes everything so easy for you to learn and understand, not to mention how welcoming and lovely she and her bambini are too. It is also very special to learn about her family’s history, her passion is so authentic, it is in her blood and it shows. Getting to taste the fruits of our labour was the cherry on the cake, or the Parmesan in the penne perhaps I should say! It really was the tastiest pasta dish we have ever made. We will be cooking more home made pasta with what we have learnt from now on, and be teaching our children what Silvana taught us. Grazie mille Silvana, ti auguriamo felicita e salute sempre! Xxx
