Learn the dying art of making pasta entirely by hand and enjoy a truly unique experience in a relaxed, homely atmosphere, where you'll learn all there is to know about pasta and will create some of the most unusual and beautiful pasta shapes, traditional in Italy but virtually unknown in the UK.
Each month there is a new pasta to learn, new flours and flavours to explore.

A brief introduction to the history of pasta and why there are 2 ways of making pasta (egg and egg-free)
Learn to mix different flours (according to the pasta of the month) and other ingredients, the best ways of kneading, and all the secrets to obtaining the perfect dough
As the dough proof, you'll learn what to look for when buying pasta in supermarkets
Cooking demonstration of the sauce that will be served with the pasta
Handle, pull, and fold the dough to obtain the pasta shape of the month (no machine used)
The best cooking technique for the perfect pasta al dente
Enjoy the delicious fruits of your labour together with the other guests, Italian style.
All equipment (minus an apron) and ingredients provided

Ciao! I'm Silvana and I'm a 4th generation artisan pasta maker from Naples. My passion is to teach the dying art of making pasta entirely by hand, saving rare pasta shapes from disappearing and helping pasta lovers to recreate the authentic Italian experience, teaching techniques passed down to me by my family.
My grandma has taught me everything I know, started training me when I was a teeny weeny 5-year-old. She's been my only teacher for 17 years, allowing me to earn first hands experience in her small pasta factory. In July 2017 I featured on BBC2's "Inside the Factory" as a pasta expert.

The workshop is held in a pretty basement homely kitchen. Warm and welcoming, with a small herb window garden with basil, parsley, mint, and sage.

Highly recommended experience. Silvana is extremely personable and passionate about sharing her knowledge. We had an amazing time, learned a lot and laughed a lot.

Silvana’s class was great fun. She’s friendly, extremely knowledgeable and knows her pasta. We enjoyed making (and especially eating) our pasta dish and Silvana answered all our questions patiently and we learned lots. Highly recommended for pasta fans!

A really warm and wonderful experience. Silvana was extremely friendly, hospitable and patient as well as having a remarkable knowledge of pasta and much else beyond. We had a great time and plan to go again (and again) as we have a lot more to learn from her.

Lots of fun! Sylvana was very knowledgeable, patient and passionate and taught us step by step how to make caramelle with spinach and ricotta, which was delicious! She was very welcoming and friendly, felt so at ease during this great experience!

We had a really nice time with Silvana who knows her craft so well. The atmosphere with the group was great and pasta was DELICIOUS. The environment could have been a little more polished and her children (though very sweet) were a little distracting.

Was a good night! Very intimate in her house’s basement. Lots of good food and learning of her background of pasta making with her family in Italy.
