ماذا ستفعل

Together we’ll make seared salmon over mashed sweet potatoes with a homemade salsa.

First, we'll wash and prep the vegetables and fish. Then we'll prepare our salsa while the sweet potatoes cook.

We’ll then cook the fish, and I'll show you tips to find the perfect heat, technique, and timing, depending on size.

Then we’ll plate everything.

While we're cooking, I will share some of my Olympic stories and my thoughts on nutrition—plus I’ll answer any of your questions.

  • salmon steaks - 1/2 pound per person with the scales off, bones out, skin still on
  • yellow flesh sweet potatoes - 1 large sized potato is enough for 2, or 1 small sized potato per person. All types of sweet potatoes work here but the yellow ones are best.
  • gluten free soy sauce (tamari) - 1 small bottle
  • sweetest tomatoes you can find - many species work for this recipe, I prefer any kind of heirloom
  • fresh cilantro - 1 bundle, fresh basil also works

This experience with Michael was amazing. I did this experience with my family and we had a blast. Michael told us a bit about his personal story, shared how food became a passion for him as he trained for the Olympics, and the role it plays in his life now. The recipe was delicious and incredible simple, and he was super thorough in ensuring that we followed along. Would gladly do another cooking experience with Michael again and as an amateur athlete myself, always good to know a bit more about athlete nutrition.

This was a blast! Michael is an amazing chef, has run in the Olympics, and has a really interesting story of changing his life and athletic performance through food, yet he is incredibly down to earth and friendly. Cooking together was a lot of fun because he shared great stories about his Olympic experience (especially learning to source quality food and the difference it made in his training) as well as lot of tips about how to cook. As a chef and restaurant owner he has a lot of experience and passion when it comes to cooking, and was super generous about answering all my questions and giving great tips for making food come out better. The recipe was really amazing. I cook a lot, and have worked with all the components before (salmon, sweet potatoes, homemade salsa) but this was the first time my cooking came out looking and tasting like something from a really fancy restaurant. I couldn't believe how simple the process was and how well the dish turned out. He also showed how to plate the food (his experience running a gourmet restaurant really showed!), which was so fun. He was really great about explaining throughout why he was doing things in certain ways and the difference it would make in the food, which was awesome. He also shared other ideas of healthy and delicious foods that he used to improve his athletic performance, which was really helpful. I'll definitely be making this dish again, as well as following up on some of the other suggestions on nutrition!
